Sweet potato quinoa mash

 

Super simple. Super fast. Super yummy. Nourishing and comforting, but at the same time very light to digest.

This is amazing side dish to any tofu / dal / bean / sprouts - you can just add some on top and have a full meal.

Ladies and gentlemen, say hi to my favourite mash!

 

Ingredients

  • 1 sweet potato

  • 1 large potato

  • 1/2 butternut squash

  • 1 cup of quinoa

  • Oregano

  • Salt

  • 2 spoons of coconut oil

 

Prep

First, the quinoa.

Pour some hot over your quinoa before you cook it. This will get rid of any weirdish betterish aftertastes.

Then, cook it in 2x the amount of water, with salt, until soft and fluffy. Usually, it will drink all the water. If not, pour it out when ready.

Now, the veggies.

While the quinoa is being cooked, chop all the veggies into larger pieces. Boil in water until soft.

 

Mash your mash

Pour any excess water out and mash your veggies (fork-mashing works perfectly here, you can leave some pieces). Add quinoa and mix well.

Add salt to taste, plenty of oregano and 2 spoons of coconut oil (or even more, taste it!)

And it's done!
